1.5 - 2 pounds chuck roast
1 yellow onion (halved)
3 bay leaves
32oz vegetable broth
5 chili de Arbol & 5 Guajillo chiles (stems removed)
1 + 1/2 cups hot water
1 Roma tomato
1/2 tablespoon sea salt
1 tsp ground black pepper
1 Tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
2 tsp Mexican oregano
1 tsp garlic powder
2 tsp allspice
1 tsp adobo
3 to 4 cloves garlic
Add dried chilies, hot water, spices, 1/2 onion, and tomato to a blender. Set to the side and allow the chilies to soften.
Add chuck roast, remaining 1/2 onion, and bay leaves to crockpot. Cover with chicken broth.
Blend dried chilies, hot water, spices, 1/2 onion, and tomato until smooth. Pour chili mixture into crockpot.
Set crockpot to cook on LOW for 8 hours.
Once the 8 hours is up, shred the meat with the back of a fork. The meat will be exceptionally tender.
Separate shredded beef from the broth.
