2 cups water
1 c. semisweet chocolate chips*
1 tsp. olive oil
1 can chickpeas (drained and rinsed)
½ c. maple syrup
¼ c. vanilla almond milk (or other non-dairy milk)
2 Tbsp. cocoa powder
1 tsp. vanilla extract
Suggestion: Use the best semi sweet chocolate chips you can find. It really makes a difference in this recipe.
1. Bring water to a boil in a small pot over high heat.
2. Place a large, heatproof bowl over pot, add chocolate chips and oil (double broiler method). Stir to combine. Cook, stirring occasionally, until chocolate is fully melted.
3. Add melted chocolate, chickpeas, maple syrup, almond milk, cocoa powder, and vanilla extract to a food processor.
4. Blend until smooth. Serve with fruit.
Servings: 9 (1/4 cup each serving)
