Vibe: To complement the cozy and indulgent baking process of your Cinnamon Muffins with Churro Streusel, I recommend playing "Banana Pancakes" by Jack Johnson. The soothing acoustic vibes and laid-back melody create a warm and comforting atmosphere, perfectly matching the joyful and nostalgic essence of your baking experience. Enjoy the sweet symphony as you whisk, mix, and bake, turning your kitchen into a haven of relaxation and culinary delight.

Ingredients:

For the Muffins:

- 2 cups all-purpose flour

- 1 cup granulated sugar

- 1 to 1.5 teaspoons baking powder

- 1/2 teaspoon salt

- 1 teaspoon ground cinnamon

- 2 large eggs

- 1 cup whole milk (or your substitute, like half-and-half or oat milk)

- 1/2 cup vegetable oil

- 1 teaspoon vanilla extract

For the Cinnamon Sugar Streusel Topping:

- 1/2 cup all-purpose flour

- 1/4 cup granulated sugar

- 1/4 cup packed brown sugar

- 1 teaspoon ground cinnamon

- 1/4 cup unsalted butter, cold and cut into small cubes

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.

  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and 1 teaspoon of ground cinnamon.

  3. In another bowl, beat the eggs and then add the milk, vegetable oil, and vanilla extract. Mix well.

  4. Add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.

  5. Spoon the batter into the muffin cups, filling each about 2/3 full.

  6. In a medium bowl, prepare the cinnamon sugar streusel topping by combining the flour, granulated sugar, brown sugar, and 1 teaspoon of ground cinnamon. Add the cold, cubed butter and cut it into the dry ingredients until the mixture resembles coarse crumbs.

  7. Once your muffins have baked and are still warm, sprinkle the streusel mixture evenly over the tops of each muffin, pressing it down slightly.

  8. Bake the muffins for 18-20 minutes or until a toothpick inserted into the center comes out clean.

  9. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

  10. Enjoy your moist and flavorful churro-inspired muffins with a delightful cinnamon sugar streusel topping!
