  • 8 ounces goat cheese

  • 1 cup vanilla yogurt

  • 1/2 cup powdered sugar

  • 1 teaspoon vanilla extract

  • Zest of 1 lemon

  • 1 cup fresh blueberries

  • 2 tablespoons fresh mint leaves, finely chopped

  • 1/4 cup honey

  • 1/3 cup crushed graham crackers or biscuits (I used Trader Joe's Speculoos Cookies)


  1. In a mixing bowl, combine the goat cheese, yogurt, powdered sugar, vanilla extract, and lemon zest. Mix well until smooth and creamy.

  2. Gently fold in half of the blueberries and half of the chopped mint leaves into the goat cheese mixture.

  3. In a separate small saucepan, heat the honey over low heat until warm and runny.

  4. Take serving glasses or bowls and layer the dessert. Start with a spoonful of the goat cheese mixture, followed by a drizzle of warm honey.

  5. Add a few fresh blueberries and a sprinkle of chopped mint leaves on top.

  6. Repeat the layers until the glasses are filled, finishing with a dollop of the goat cheese mixture.

  7. Finally, garnish the dessert with the remaining blueberries and mint leaves.
