Shortly after transitioning out of veganism, I started experimenting with chili recipes, and this one has become a favorite for hosting sports events. Packed with savory flavors and hearty ingredients like ground beef, onions, and kidney beans, this crowd-pleasing dish is a surefire winner among family and friends. Simply brown the beef, sauté onions and garlic, then let your crockpot do the rest. With minimal effort and maximum flavor, this chili is perfect for sharing and enjoying alongside your favorite game day snacks. Serve it over crispy Fritos with a sprinkle of cheese for a satisfyingly delicious Super Bowl experience.

  • 1 lb ground beef

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 1-2 Serranos, finely chopped

  • 2 cups beef broth

  • 1 can (15 oz) kidney beans, drained and rinsed

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1 teaspoon sugar

  • Salt and pepper to taste

  • 1 bag of Fritos

  • 2 cups shredded cheddar cheese

  • Sour cream, for topping (optional)

  • Chopped green onions, for topping (optional)

  • Pickled jalapeños, for topping (optional)

  • Pickled red onions, for topping (optional)



1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.

2. Add the chopped onion to the skillet and cook until translucent, about 5 minutes. Add the minced garlic and Serranos and cook for an additional minute.

3. Transfer the cooked beef, onion, and garlic to a crockpot.

4. Add beef broth, kidney beans, chili powder, cumin, paprika, sugar, salt, and pepper to the crockpot. Stir to combine.

5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.

6. Taste and adjust seasoning if needed before serving.

7. While the chili is simmering, arrange the Fritos in a large serving bowl or on a platter, creating a base for your Frito bar.

8. Once the chili is ready, spoon it over the Fritos, covering them generously.

9. Sprinkle shredded cheddar cheese over the chili-covered Fritos, allowing the cheese to melt slightly from the warmth of the chili.

10. Optionally, top the chili cheese Fritos with dollops of sour cream and chopped green onions for added flavor and freshness.
